Tasty Potato Samosas
A yummy triangular shaped pastry that is filled with a delicious filling.
Ingredients
2 large potatoes
1 large onion
Coriander
1 teaspoon masala
1 teaspoon salt
Spring roll pastry
2 tablespoons of flour - add water to make a paste


Prepare the spring roll strips by cutting them into 6cm wide strips. Use two sheets for one samosa.
Method
In a medium saucepan, fry the finely chopped onions with oil until brown.

Add in diced potatoes, masala and salt, half a cup of water and mix.

Cook until potatoes are soft.
Add coriander to cooled potatoes.

Place a teaspoon of filling on a strip of spring roll pastry and fold into triangles. Seal with flour paste.

Shallow fry on medium heat and enjoy!
