Mince Pies
This is a South African Indian recipe. A flaky puff pastry filled with curried mince.
Ingredients
Flaky puff pastry
500g mince
2 medium sized potatoes (finely diced)
1 large onion (finely diced)
1 teaspoon of crushed ginger and garlic
Salt to taste
1 tablespoon of curry powder
½ cup of chopped coriander
2 tablespoons of oil
Method
- Cook mince, salt, curry powder, ginger and garlic in a 1/4 cup of water on medium to low heat for 5 minutes.
- Add in diced onion and cook for another 5 minutes.
- Now add in the diced potatoes and cook until the potatoes are soft (approximately 20 minutes). Keep adding small amounts of water to ensure the mince does not burn.
- Once the potatoes are cooked and all the liquid has been evaporated, turn up the heat and stir fry cooked mince in 2 tablespoons of oil for 5 - 10 minutes.
- Let it cool for 5 minutes then add chopped coriander. Mix well.
- Divide the sheets of pastry into 6.
- Spoon in a tablespoon of mixture onto the pastry, fold and seal the edges using a fork.
- Brush with an egg wash and bake for 20 minutes at 180 degrees celsius.
