Marianne’s Birthday Cake
For Marianne’s Birthday Raquel @auckwardveggie made her a dark chocolate black forest cake. A great option for a gluten-free, dairy-free and/or vegan option.

Ingredients:
Cake:
Dry:
1½ cups of gluten-free flour
2/3 cups of cocoa powder
1 tsp of baking soda
¼ tsp of salt
Wet:
½ cup of water
2/3 cup of soy milk
2 Tbsps of coconut oil (melted)
¼ cup of coconut sugar
¼ cup of maple syrup or honey
1 tsp of vanilla
Icing:
400ml of coconut cream (chilled for 12 hours)
Method:
- Place coconut cream in the fridge the night before
- Preheat the oven to 180 degrees Celsius. Line and grease (with extra coconut oil) a cake pan.
- Combine all dry ingredients in a large bowl
- In a separate bowl combine wet ingredients and whisk together.
- Add wet ingredients to the dry ingredients and whisk together until well combined.
- Pour batter into the cake pan and cook for 18-22 minutes.
- Once cooked set aside to cool.
- Just before serving take chilled coconut cream and scoop off the cream at the top leaving the coconut water. Whip the coconut cream.

Top cake with coconut cream and I added plum jam, mixed berries, coconut and dark chocolate shavings.
