Anzac Biscuits
We may be staying at home this Anzac day but we can still enjoy the holiday through baking yummy anzac biscuits. We hope you will have fun baking these biscuits with your little ones. Thanks to Raquel @auckwardveggie for this recipe.
Ingredients:
1 cup of oats
¾ cup of desiccated coconut
1 cup of flour
1 cup of brown sugar
½ tsp of baking soda
2 TBsps of hot water
100g of coconut oil or butter (melted)
1 Tbsp of maple syrup or honey

Method:
- Preheat oven to 180 degrees
- Combine dry ingredients
- In a separate bowl combine coconut oil (or butter) and maple syrup (or honey)
- Dissolve baking soda in hot water & once dissolved add to wet ingredients
- Add the wet ingredients to dry mixture and combine
- Roll into balls, flatten & place on baking tray
- Cook for around 15 minutes.
